Sourdough Discard Cinnamon Rolls

Ingredients 

4 cups all-purpose flour - 560 grams

1 teaspoon baking soda

2 teaspoon baking powder

1 teaspoon salt

1 cup sourdough discard - 227 grams

1 cup water - 236 grams

1/2 cup butter melted - 114 grams

60 grams of pure maple syrup

Cinnamon Sugar Filling 

Melt some coconut oil (but not too melted, more soft)

100 grams of coconut sugar

Dash of maple syrup

2 tablespoons cinnamon

Directions

Preheat the oven to 370 F and prep cast iron by brushing it with some butter

Melt butter and set aside to cool 

in a large bowl, add all of the dry ingredients - flour, baking soda, baking powder, and salt

Add all of the wet ingredients - sourdough discard, water, melted butter, and maple syrup 

Mix together until a ball forms - might take a bit

Place the dough on a lightly floured surface and roll out so it is 1/4 inch thick

Filling Instructions 

Soften coconut oil and add the coconut sugar, cinnamon, and maple syrup!

Spread the filling over the top of the dough with a spoon 

Begin rolling up the dough into a tight log 

Slice into even rolls with a sharp knife you should have 12 rolls 

Place the rolls into the cast iron and back for 25 minutes!
